Fajita Pitas

Ingredients
1 package whole grain pita bread
2-3 chicken breasts
1 medium onion
2 bell peppers ( any colors)
1 Tbs olive oil
Ranch Dressing- Your favorite brand

Directions
Grill chicken on, outdoor grill, indoor grill or skillet
Slice strips of onion and peppers and saute in olive oil
Place chicken and veggies in pita and top each pita with a 1 tsp of ranch dressing and fold into a taco shape.

Southwest Quinoa Rice Pilaf... So Flavorful !

Before you begin...
1.Soak brown rice in bowl of water over night.
This will make the rice more digestible and will break down the fidic acid which inhibits zinc absorption.


2,Rinse your Quinoa to release it's natural pesticide. This helps remove some bitterness.

Recipe
1/2 cup brown rice
1/2 cup Quinoa
1Tbs Butter
1/2 cup frozen corn ( not on the cob)
1/2 can black beans, drained.
1/2 tsp cumin ( to taste)
1/2 tsp garlic powder ( to taste)
Salt and pepper to taste
Handful of cilantro or scallions( optional)

Cook brown rice in boiling water. 2 parts water to 1 part rice for 20 -25 minutes covered. Add in your Quinoa for the last 15 minutes. You do not need to add any more water. Keep covered. If you do not presoak your rice, use 1/2 cup more water and cook rice 45 minutes total.
When  rice is tender, add in  frozen corn , beans,butter, salt & pepper garlic powder and cumin. Stir in a handful of fresh cilantro or scallions.

Serve this as a side dish or top it with chicken or shrimp.

Brown Bagging It - Satisfying Arugala Salad with Tuna and Rice

Packing healthy lunches is a challenge. But this lunch is quick to prepare is ultra- satisfying.This is also a great lunch for those of you looking for Gluten Free ideas.

  • 2 cups Arugala or Spring Mix salad
  • 1Tbs Homemade or all natural dressing (Italian,vinegaret or poppie seed dressings work best)
  • 1/3 to 1/2  90second rice mix heated or cold ( your  preference, I like it cold with this dish)
  • 1 can solid white tuna or salmon

In Tupperware combine tuna and dressing. Mix well and store in lunch box.
in another Tupperware place 2 cups arugala or spring mix salad. Store in lunch box with ice pack. At lunch time, combine the two Tupperware containers and enjoy
