Packing healthy lunches is a challenge. But this lunch is quick to prepare is ultra- satisfying.This is also a great lunch for those of you looking for Gluten Free ideas.
- 2 cups Arugala or Spring Mix salad
- 1Tbs Homemade or all natural dressing (Italian,vinegaret or poppie seed dressings work best)
- 1/3 to 1/2 90second rice mix heated or cold ( your preference, I like it cold with this dish)
- 1 can solid white tuna or salmon
In Tupperware combine tuna and dressing. Mix well and store in lunch box.
