Garden Fresh Summer Salad

1 large tomato or 1/2 pint grape tomatoes
1 cumber, skin removed
2 tsp white wine vinegar
pepper and salt to taste
5 Tbs feta cheese, crumbled or cubed

Combine and enjoy!

Island Fusion Rice

This recipe is the answer to boring rice dishes. My husband, who doesn't care for rice, says this is one of his favorite side dishes.

Ingredients
1 cup brown rice
2 cups water
1 can Rotel brand tomatoes with green chilis, drained
1 cup crushed pinapple drained or fresh pineapple finely chopped ( or mango)
1/2 tsp curry powder
1/2 tsp cummin
Salt and pepper to taste
1 pat butter ( reserved)

Bring 2 cups water to boil and combine all ingredients, except butter, and cover

Simmer on low for 30 min or until rice is tender. Stir in butter and serve.

Shrimp in Spicy Red Sauce... AMAZING

Ingredients
1 Tbs olive oil
1/4 tsp crushed red pepper flakes
3-4 Large cloves garlic- chopped fine or use garlic press
1, 28oz can crushed tomatoes (I use cento brand)
1 tsp white or red vinegar
splash of white wine
1.5 - 2lbs shrimp
1/2 - 1lb pasta (Linguini or Boccatini)

Boil pasta and follow package directions.

Cook garlic, oil and crushed red pepper flakes for 1 minute on medium low heat. Add white wine, tomatoes, and vinegar. Simmer 5 min. Add Shrimp and simmer until cooked through. Toss in cooked pasta.

Roasted Green Beans adn Tomatoes

Ingredients
1 lb fresh green beans, trimmed
1 pint cherry tomatoes( some halved)
1/2 tsp salt
1/2 tsp pepper
2 cloves garlic or garlic powder
(2 tbs  Italian dressing optional)

Toss and roast in 400 degree oven for 20 min.

Fajita Pitas

Ingredients
1 package whole grain pita bread
2-3 chicken breasts
1 medium onion
2 bell peppers ( any colors)
1 Tbs olive oil
Ranch Dressing- Your favorite brand

Directions
Grill chicken on, outdoor grill, indoor grill or skillet
Slice strips of onion and peppers and saute in olive oil
Place chicken and veggies in pita and top each pita with a 1 tsp of ranch dressing and fold into a taco shape.

Quick Protein Pancakes

Ingredients

  • 1/2 cup oats - old fashoned
  • 1/2 cup cottage cheese
  • 2 eggs (Or 4 egg whites..which is what I used)
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 TBL canola Oil

Directions

  1. Blend ingredients in a blender. Don’t over blend though.
  2. Pour 1/4 cup of batter onto greased skillet.
Makes about 5 pancakes

Dark Chocolate Sea Salt Almonds

So easy and completely satisfying!

1 bag Ghirardelli chocolate morsels- 60 % Cacao
1/2 pound raw almonds

Use double boiler, or place glass bowl over pot of boiling water
Place wax paper over cookie sheet. You may need several sheets.


Melt chocolate over boiling water then add almonds and mix until nuts are covered in chocolate.

Take tablespoon and spoon out small clusters of almonds 3-5 almonds per cluster.

Spoon clusters onto wax paper. Sprinkle sea salt over each cluster and place in fridge or freezer to harden.

Once set up, store in tupperware in the fridge.
