Southwest Quinoa Rice Pilaf... So Flavorful !

Before you begin...
1.Soak brown rice in bowl of water over night.
This will make the rice more digestible and will break down the fidic acid which inhibits zinc absorption.


2,Rinse your Quinoa to release it's natural pesticide. This helps remove some bitterness.

Recipe
1/2 cup brown rice
1/2 cup Quinoa
1Tbs Butter
1/2 cup frozen corn ( not on the cob)
1/2 can black beans, drained.
1/2 tsp cumin ( to taste)
1/2 tsp garlic powder ( to taste)
Salt and pepper to taste
Handful of cilantro or scallions( optional)

Cook brown rice in boiling water. 2 parts water to 1 part rice for 20 -25 minutes covered. Add in your Quinoa for the last 15 minutes. You do not need to add any more water. Keep covered. If you do not presoak your rice, use 1/2 cup more water and cook rice 45 minutes total.
When  rice is tender, add in  frozen corn , beans,butter, salt & pepper garlic powder and cumin. Stir in a handful of fresh cilantro or scallions.

Serve this as a side dish or top it with chicken or shrimp.
