Cannellini Bean Soup

2 Tbs Olive Oil
2 Large Carrotts, Diced
2 Onions, Chopped
2 Cloves Garlic, minced
2 Cans Cannelini Beans, Drained
1lb Ripe Tomatoes peeled and chopped, or canned diced tomatoes
3 Tbs Tomatoe Paste
1.75 liters Veggie or Chicken Stock
2 Tbs Lemon Juice
Fresh Parsley for garnish

Saute, onions and carrot until just softened, add Garlic and cook another minute. Add remaining ingredients and simmer 45 minutes uncovered.

Add more or less liquid as desired. Also great with chicken sausage!
